In the industrial docklands of Refshaleøen in Copenhagen, one of the world’s most radical dining experiences unfolds behind monumental bronze doors. Alchemist is not simply a restaurant, it is an immersive theatre of gastronomy conceived by visionary chef Rasmus Munk. A Restaurant Beyond the Plate
Opened in its current form in 2019, Alchemist represents a new frontier in fine dining. The restaurant holds two Michelin stars and consistently ranks among the world’s top culinary destinations.
But accolades only tell part of the story. At Alchemist, dinner is structured like a theatrical production. Over the course of four to six hours, guests experience approximately 50 “impressions” - courses presented in a series of narrative acts that unfold across multiple spaces within the building.
The journey begins with an edible “ticket”, inviting diners into a universe where food functions as both sustenance and storytelling. Each dish arrives with visual drama and conceptual depth, sometimes beautiful, sometimes unsettling, but always thought-provoking.

Architecture of a Culinary Stage
The restaurant itself plays an equally essential role in the experience. Housed in a former industrial warehouse, the space was transformed into an immersive environment where architecture and gastronomy interact.
At the heart of the venue lies a monumental planetarium-style dome constructed with roughly 200 tons of steel. Twelve projection systems animate the curved ceiling with shifting digital landscapes - northern lights, deep oceans, cosmic skies - creating a surreal atmosphere as diners eat beneath it.
Surrounding the dome are installation rooms and transitional spaces that function like scenes in a play. Guests move through lounges, balconies, and artistic environments that blur the boundaries between restaurant, gallery, and performance stage.

The Philosophy of Holistic Cuisine
Chef Rasmus Munk describes his approach as “holistic cuisine” - a philosophy that extends the meaning of dining beyond flavor alone. In this vision, gastronomy becomes a platform to engage with culture, science, and global issues.
Many dishes at Alchemist intentionally provoke reflection. One course resembles a human eye made of cod jelly filled with caviar and shellfish, referencing modern surveillance culture. Another dessert shaped like a coffin confronts the realities of child labor.
These conceptual dishes are designed to challenge diners intellectually as much as sensorially. As Munk has explained, his aim is not only to feed guests but to spark dialogue about sustainability, ethics, and society at large.
